Ingredients
  

  • 2 cups Rolled oats Old-fashioned oats work best
  • ½ cup Almonds Roughly chopped
  • ¼ cup Cashews Adds richness
  • 2 tbsp Pumpkin seeds Optional but great crunch
  • 3 tbsp Honey Natural sweetness
  • 2 tbsp Coconut oil Melted
  • 1 tsp Cinnamon Adds warm flavor
  • ½ tsp Salt Balances sweetness
  • ¼ cup Raisins Added after baking

Method
 

Step 1: Preheat the Oven
  1. I start by preheating the oven to 325°F (160°C).
  2. Lower heat helps the oats toast slowly instead of burning.
Step 2: Mix the Dry Ingredients
  1. In a large bowl I combine:
  2. rolled oats
  3. chopped almonds
  4. cashews
  5. pumpkin seeds
  6. cinnamon
  7. salt
  8. The smell of cinnamon already starts to come through at this stage.
Step 3: Add the Sweetener
  1. Next I pour in:
  2. honey
  3. melted coconut oil
  4. Then I mix everything well until the oats are lightly coated.
Step 4: Spread the Mixture
  1. I spread the mixture evenly on a baking tray.
  2. Try not to pile it too thick. A thin layer ensures even roasting.
Step 5: Bake Until Golden
  1. I bake it for 10–12 minutes, stirring halfway through.
  2. The oats slowly turn golden and the kitchen starts smelling like toasted nuts and warm honey.
Step 6: Add Raisins
  1. After removing from the oven, I stir in the raisins while the granola is still warm.
  2. Then I let it cool completely.
  3. This step is important because the granola becomes much crunchier as it cools.

Use rolled oats

Quick oats tend to become too soft.

Don’t overbake

Granola continues crisping while cooling.
