This Roberto Soup Recipe is a hearty vegetable and lentil-based soup. Some people also call it roberto stew because it is slightly thick and filling.It is made with simple vegetables, lentils, mild spices, and herbs. The texture is rich but not heavy. It is healthy but still very comforting.

Ingredients
  

  • 1 cup Red lentils Washed well
  • 1 pound Italian Sausages Cut into chunks (mild or spicy)
  • 1 medium Onion Finely chopped
  • 1 medium Carrot Diced
  • 1 medium Potato Cubed
  • 2 cloves Garlic Minced
  • 1 tsp Ginger Grated
  • 1 tbsp Olive oil Or any cooking oil
  • 1 tsp Cumin powder Adds warmth
  • ½ tsp Turmeric For color & health
  • ½ tsp Black pepper Freshly crushed
  • 4 cups Vegetable broth Or water
  • Salt to taste Salt Adjust later
  • 1 tbsp Lemon juice Optional but recommended
  • 2 tbsp Fresh coriander For garnish

Equipment

  • 1 Large pot Heavy bottom preferred
  • 1 Cutting board For chopping
  • 1 Knife Sharp
  • 1 Wooden spoonFor stirring
  • 1 Ladle For serving

Method
 

Step 1: Heat the Oil
  1. I heat olive oil in a large pot on medium flame.
Step 2: Sauté the Base
  1. Add chopped onion and cook for 3–4 minutes until soft.
  2. Then add garlic and ginger. Cook for 1 minute until fragrant.
Step 3: Add Vegetables And Tossed Sausages
  1. Now I add carrot and potato. Stir for 2 minutes.
Step 4: Add Spices
  1. Add cumin powder, turmeric, and black pepper. Stir well.
Step 5: Add Lentils & Liquid
  1. Add washed red lentils and vegetable broth.
  2. Bring everything to a boil.
Step 6: Simmer
  1. Lower the heat and let it cook for 25–30 minutes until lentils are soft.
Step 7: Final Touch
  1. Add salt and lemon juice. Stir well.Garnish with fresh coriander.
