  • 2 cups shredded cooked chicken rotisserie chicken works best
  • 8 oz cream cheese softened
  • ½ cup buffalo sauce adjust for spice level
  • ½ cup ranch dressing balances the heat
  • 1 cup shredded cheddar cheese sharp cheddar preferred
  • ½ cup mozzarella cheese adds stretchiness
  • ¼ cup sour cream makes it smoother
  • 2 tbsp butter optional but adds richness
  • 2 tbsp chopped green onions garnish
  • ½ tsp garlic powder optional flavor boost

Equipment

  • Medium mixing bowl

  • A cast iron skillet also works beautifully for this dip.

Method
 

Step 1.Preheat the Oven
  1. Set your oven to 375°F (190°C).
  2. While the oven heats, let the cream cheese soften slightly. Cold cream cheese doesn’t mix well.
Step 2.Combine the Creamy Base
  1. In a large bowl mix:
  2. cream cheese
  3. ranch dressing
  4. sour cream
  5. buffalo sauce
  6. garlic powder
  7. Stir until smooth.
  8. The mixture should look thick but creamy.
Step 3.Add Chicken and Cheese
  1. Fold in:
  2. shredded chicken
  3. half the cheddar cheese
  4. half the mozzarella
  5. Mix until everything is evenly coated.
  6. At this point the mixture smells slightly tangy and buttery — a good sign.
Step 4.Transfer to Baking Dish
  1. Spread the mixture into your baking dish.
  2. Top with the remaining cheeses.
  3. If you like a richer finish, dot small pieces of butter across the surface.
Step 5.Bake Until Bubbling
  1. Bake for 20–25 minutes.
  2. You’ll know it’s ready when:
  3. the cheese melts completely
  4. the edges start bubbling
  5. the top turns lightly golden

Step 6.Add Fresh Garnish
  1. Sprinkle chopped green onions over the top.
