Easy Tater Tot Crust Quiche

Swap a traditional pie crust for crispy tater tots and you’ll have a fun, hearty quiche that’s perfect for breakfast, brunch, or even a simple dinner. Filled with eggs, ham, spinach, green onions, and plenty of melted mozzarella, this recipe is both comforting and easy to make.

Ingredients

  • 2½ cups frozen tater tots
  • 6 large eggs
  • 1 cup half-and-half
  • Salt and black pepper, to taste
  • ½ cup cooked ham, diced
  • 1½ cups shredded mozzarella cheese, divided
  • 3 green onions, thinly sliced
  • 1 cup roughly chopped spinach

Instructions

  • Preheat your oven to 425°F (220°C).
  • Arrange the frozen tater tots in a pie dish, covering the bottom and slightly up the sides. Bake for 15 minutes until they begin to soften.
  • Remove the dish from the oven and reduce the oven temperature to 325°F (163°C).
  • Using the back of a fork or a potato masher, gently press the softened tater tots together to create an even crust.
  • In a large mixing bowl, whisk together the eggs, half-and-half, salt, and pepper until well combined.
  • Stir in the diced ham, 1 cup of the mozzarella cheese, green onions, and chopped spinach.
  • Pour the egg mixture into the prepared tater tot crust, then sprinkle the remaining ½ cup of mozzarella over the top.
  • Bake for 40 to 45 minutes, or until the center is fully set and the top is lightly golden.
  • Let the quiche rest for 5 to 10 minutes before slicing. Serve warm and enjoy.

Tips

  • For a crispier crust, bake the tater tots until lightly golden before pressing them into the pie dish.
  • Feel free to substitute bacon or breakfast sausage for the ham.
  • Cheddar, Monterey Jack, or Swiss cheese also work well in this recipe.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
