Ingredients
- 2½ cups frozen tater tots
- 6 large eggs
- 1 cup half-and-half
- Salt and black pepper, to taste
- ½ cup cooked ham, diced
- 1½ cups shredded mozzarella cheese, divided
- 3 green onions, thinly sliced
- 1 cup roughly chopped spinach
Instructions
- Preheat your oven to 425°F (220°C).
- Arrange the frozen tater tots in a pie dish, covering the bottom and slightly up the sides. Bake for 15 minutes until they begin to soften.
- Remove the dish from the oven and reduce the oven temperature to 325°F (163°C).
- Using the back of a fork or a potato masher, gently press the softened tater tots together to create an even crust.
- In a large mixing bowl, whisk together the eggs, half-and-half, salt, and pepper until well combined.
- Stir in the diced ham, 1 cup of the mozzarella cheese, green onions, and chopped spinach.
- Pour the egg mixture into the prepared tater tot crust, then sprinkle the remaining ½ cup of mozzarella over the top.
- Bake for 40 to 45 minutes, or until the center is fully set and the top is lightly golden.
- Let the quiche rest for 5 to 10 minutes before slicing. Serve warm and enjoy.
